EASTER GRASS SLAW

Chopped apple and schredded carrot add pretty color to this swift salad that uses packaged coleslaw mix to save time. A creamy dressing nicely coats the crunchy combination.

Ingredients

  • 6 cup(s) coleslaw mix 1 16oz Bag
  • 1 yellow pepper chopped
  • 1 red apple chopped
  • 1 cup(s) mayonnaise
  • 1/2 cup(s) sugar
  • 2 tablespoon(s) cider vingar
  • 1 teaspoon(s) salt
  • 1/4 teaspoon(s) pepper

Preparation

  1. In a large bowl, combne first six ingredients. In a small bowl, combine mayo, sugar, vinegar, salt and pepper. Pour over the cabbage mixture and toss to coat. Cover and refrigerate until serving. Preferably 6-8 hours or overnight.
