I substituted half of a cup of whipping cream for the milk, which thickened it up nicely. Next time, I will also use more tea bags since the earl grey flavor was very mild, and was nearly overshadowed by the lemon juice's flavor.
Earl Grey Gelato
The tea mixture may appear curdled after you add the milk. But don't be alarmed; you'll be rewarded with a smooth, luxurious gelato when the mixture comes out of the ice-cream freezer.

Ingredients
- 3 cups water
- 1 1/2 cups sugar
- 5 Earl Grey tea bags
- 2 tablespoons fresh lemon juice
- 1 1/2 cups whole milk
Preparation
- Combine water and sugar in a large saucepan; bring to a boil, stirring until sugar dissolves. Remove from heat, and add tea bags. Cover and steep 5 minutes; discard tea bags. Stir in juice; cool completely. Stir in milk.
- Pour tea mixture into the freezer can of an ice-cream freezer; freeze according to the manufacturer's instructions.
