How to Make It

Melt butter in a small saucepan over medium-high heat. Cook 5 minutes or until butter begins to foam on the surface. Reduce heat to medium-low; cook 10 minutes or until foam has sunk to the bottom of the pan. Skim any remaining foam from surface. Strain skimmed butter through a fine wire-mesh sieve lined with cheesecloth, discarding any solids.
