Double Musky Inn Carrot Cake

Absolutely the best! I never liked carrot cake until I had the at the Double Musky Inn in Girdwood Alaska.

Ingredients

  • 3 cup(s) Flour
  • 2 cup(s) Sugar
  • 1 tablespoon(s) baking soda
  • 1 tablespoon(s) Cinnamon
  • 1 1/2 cup(s) Pecans Chopped
  • 6 Eggs
  • 2 cup(s) Oil
  • 1 tablespoon(s) Vanilla
  • 2 cup(s) carrots Grated
  • 2 cup(s) Coconut Shredded
  • 20 ounce(s) Pineapple Crushed and drained
  • Frosting
  • 8 ounce(s) cream cheese
  • 1/3 pound(s) butter
  • 1 tablespoon(s) Vanilla
  • 3 cup(s) powdered sugar
  • 1/3 cup(s) Milk

Preparation

  3. 3 cups flour
  4. 2 cups sugar
  5. 1 tbl baking soda
  6. 1 tbl cinnamon
  7. 1 1/2 cup chopped pecans
  8. 6 eggs
  9. 2 cups oil
  10. 1 tbl vanilla
  11. 2 cups grated carrot
  12. 2 cups shredded coconut
  13. 1 20 oz can crushed pineapple, drained

  14. Combine flour, sugar, baking soda, cinnamon, and pecans. Combine the rest of the ingredients in a separate bowl. Combine the two mixtures and pour into a greased and floured 9x15 inch baking pan. Cook at 350 degrees until done, about 50 minutes.

  15. Carrot Cake Frosting

  16. 8 oz cream cheese
  17. 1/3 lb butter
  18. 1 tb vanilla
  19. 3 cups powdered sugar
  20. 1/3 cup milk

  21. Cream butter and cream cheese in mixer. Add vanilla and powdered sugar and mix until smooth and somewhat fluffy. Add milk until consistency is slightly oozy.
