Doña Carmen's Garlic Rice

Fusté was greatly influenced by her mentor, Doña Carmen. This recipe of Carmen's turns ordinary rice into a simple yet flavorful side.

Ingredients

1 1/2 teaspoons olive oil
2 cups uncooked long-grain rice
6 garlic cloves, crushed
3 1/4 cups water
1 1/2 teaspoons salt

Preparation

Heat oil in a medium saucepan over medium heat. Add rice and garlic to pan; cook 3 minutes, stirring frequently. Stir in 3 1/4 cups water and salt; bring to a simmer. Cover, reduce heat to medium-low, and cook 20 minutes or until liquid is absorbed. Fluff with a fork before serving.
