Dinner Muffins

Yield about 3 dozen

Ingredients

  • 2 cups sifted all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 2 teaspoons sugar
  • 1 teaspoon salt
  • 1/2 cup butter or margarine, melted
  • 2 eggs, beaten
  • 1/4 cup milk

How to Make It

  1. Sift together dry ingredients in a medium mixing bowl. Add butter and eggs; mix well. Add milk, stirring just until dry ingredients are moistened.

  2. Spoon batter into greased miniature muffin pans, filling two-thirds full. Bake at 400° for 12 minutes or until lightly browned.
