Dilly Blue Cheese Potato Salad

The cool, bold tastes of dill and blue cheese takes potato salad to another level.

1 cup mayonnaise
1 cup sour cream
1 teaspoon lemon juice
1 bunch green onions, chopped
5 stalks celery, chopped
1/2 cup fresh dill, chopped
1/2 cup crumbled blue cheese
3 pounds new redskin potatoes, quartered and cooked
1 teaspoon salt
pepper to taste


Blend together mayonnaise, sour cream and lemon juice in a large bowl. Add onions, celery and dill; fold in blue cheese and potatoes. Add salt and pepper to taste. Chill overnight.
