Dill-and-Almond Green Beans
Not a huge dill lover? Substitute fresh basil or flat-leaf parsley.

- 1 pound fresh green beans, trimmed
- 1/4 cup slivered almonds
- 1 tablespoon olive oil
- 1 garlic clove, minced
- 1 tablespoon chopped fresh dill
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- Cook beans in boiling water to cover in a Dutch oven over medium-high heat 10 minutes. Plunge into ice water to stop the cooking process; drain.
- Sauté almonds in hot oil in a large skillet over medium heat 3 minutes or until lightly browned. Add garlic; sauté 30 seconds. Stir in green beans, dill, salt, and pepper; cook 2 minutes or until thoroughly heated. Serve immediately.
