Dijon Smashed Potatoes

For more pungent flavor, we stirred in Dijon mustard to easy-to-prepare Dijon Smashed Potatoes.

This recipe goes with Seared Steaks with Red Wine-Cherry Sauce

  • Yield: Serves 4 (serving size: about 1 cup)

Ingredients

  • 1 1/2 pounds quartered Yukon gold potatoes
  • 3/4 cup whole milk
  • 2 tablespoons minced fresh chives
  • 1 tablespoon Dijon mustard
  • 1 tablespoon butter
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Preparation

Steam potatoes, covered, 20 minutes or until potatoes are very tender. Place potatoes in a large bowl; add milk, chives, Dijon mustard, butter, salt, and pepper. Mash potato mixture with a potato masher until desired consistency.
