Dijon-Potato Salad with Smoked Chicken Sausage

    I was a bit hesitant about trying this recipe since I feel a little bit of this mustard goes a long way. I was pleasantly suprised! Very good and much healthier than the standard mayo recipes. I used Italian style chicken sausages w/ Provolone cheese that I picked up at Sams Club.

    only made the potato salad- was great change from the usual heavy mayo-filled version. Loved it and will make it again!

    This is our new go-to potato salad. The secret really is to make it the night before. Guests can't believe the creaminess is only from the Dijon mustard. For special occasions we like to use red, white and blue fingerlings, which we steam instead of boil. That ensures you don't get any waterlogged spuds and also the blue potatoes won't bleed.

    I've made this recipe twice and my family really liked it. This week I could not find my usual smoked chicken sausage instead I found a fajita spice chicken sausage. I changed the recipe a bit adding salsa instead of the mustard, green peppers and garlic instead of the celery, and I tossed in some smoked paprika (my sausage was not really smokey) and cumin. It was a good twist to this recipe.
