Dijon Beef and Spring Greens

Make a quick and easy main dish salad using deli roast beef and a package of fresh spring salad greens.  Drizzal with a  homemade Dijon dressing to add the perfect tangy  flavor.

  • 1/4 cup Dijon mustard
  • 1 1/2 tablespoons balsamic vinegar
  • 1 garlic clove, minced
  • 2 teaspoons sugar
  • 1 (12-ounce) package spring greens or 6 cups fresh mesclun mix
  • 9 ounces deli roast beef, diagonally sliced
  • 1 small red bell pepper, seeded and cut into thin strips
  • 2 ounces blue cheese, crumbled
  • 1/2 cup alfalfa sprouts
