Deviled Eggs

Yield 8 to 12 servings


  • 1 dozen hard-cooked eggs
  • 1/2 cup mayonnaise
  • 1 tablespoon minced onion
  • 2 teaspoons prepared mustard
  • 1/4 teaspoon salt
  • Dash of pepper
  • Paprika
  • 12 slices pimiento-stuffed olives
  • Shredded lettuce

How to Make It

  1. Cut eggs in half lengthwise; remove yolks. Mash yolks; stir in next 5 ingredients.

  2. Generously spoon yolk mixture over cut side of 12 egg white halves. Top with remaining egg white halves, cut side down; press gently. Sprinkle with paprika, and garnish with olive slices. Serve on shredded lettuce.
