Ingredients

  • 3/4 cup sugar
  • 1/4 cup stick margarine, softened
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 1/4 cups all-purpose flour
  • 1/4 cup yellow cornmeal
  • 3/4 teaspoon baking soda
  • 1/3 cup finely chopped pecans, toasted
  • 1/3 cup chopped pitted dates
  • Vegetable cooking spray

Preparation

  1. Cream sugar and margarine at medium speed of a mixer until fluffy (about 3 minutes). Add vanilla and egg; beat well. Combine flour, cornmeal, and baking soda; stir. Add to creamed mixture; beat well. Stir in pecans and dates.
  2. Drop dough by level tablespoons onto baking sheets coated with cooking spray. Bake at 350° for 10 minutes; let cool on pans 2 minutes. Remove from pans; let cool completely on wire racks.
