- 1 (8-ounce) package chopped dates
- 1 cup chopped pecans
- 1 cup sifted powdered sugar, divided
- 2 egg whites
- 1/2 teaspoon vanilla extract
How to Make It
Combine dates, pecans, and 1/2 cup sugar in a small mixing bowl. Set aside.
Beat egg whites (at room temperature) in a medium mixing bowl until soft peaks form. Add remaining sugar, 2 tablespoons at a time, beating until stiff peaks form. Fold in reserved date mixture.
Drop date mixture by heaping teaspoonfuls onto greased cookie sheets. Bake at 200° for 1 hour. Cool slightly on cookie sheets. Remove to wire racks to cool completely.
