Date-Bacon Muffins

Yield 1 1/2 dozen

Ingredients

  • 1/4 cup butter or margarine, softened
  • 2 tablespoons sugar
  • 1 egg
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 3/4 cup chopped dates
  • 4 slices bacon, cooked and crumbled

How to Make It

  1. Cream butter; gradually add sugar, beating well. Add egg; beat until blended.

  2. Combine flour, baking powder, and salt; add to creamed mixture alternately with milk, beginning and ending with flour mixture. Stir in dates and crumbled bacon.

  3. Spoon batter into greased muffin pans, filling two-thirds full. Bake at 400° for 20 minutes.
