Ingredients
- 5 celery stalks chopped
- 5 green onions chopped
- 2 yellow onions chopped
- 1 white onions chopped
- 2 green peppers chopped
- 1 yellow pepper chopped
- 12 clove(s) garlic minced
- 2 teaspoon(s) oregano
- 2 teaspoon(s) basil
- 1 teaspoon(s) thyme
- 4 tablespoon(s) parsley
- 1 can(s) tomato paste
- 3 can(s) whole tomatoes 28oz each can
- 1 1/2 jar(s) whole sun dried tomatoes in oil 8 1/2 oz ea
- 2 bay leaves
- 1- 1/2 cup(s) red wine
- 3/4 cup(s) water
- 1 teaspoon(s) salt
Preparation
- Place first 11 ingredients in dutch oven and saute in oil (use oil from sun dried tomatoes) until tender
- Add tomato paste, whole tomatoes, sun dried tomatoes, bay leaves, red wine, water, and salt
- Simmer until done-about 45 minutes
