Damson Caramel Pie

Yield one 9-inch pie


  • 5 eggs, beaten
  • 2 cups firmly packed light brown sugar
  • 1 cup butter or margarine, melted
  • 1 cup Damson Plum preserves
  • 1 unbaked (9-inch) pastry shell

How to Make It

  1. Combine eggs, sugar, butter, and preserves in a medium mixing bowl; beat at medium speed of an electric mixer until smooth. Pour filling into pastry shell. Bake at 350° for 45 minutes or until a knife inserted in center comes out clean. Cool pie completely before serving.
