Ingredients

2 tablespoons ground ginger
1 tablespoon plus 2 teaspoons ground coriander
1 tablespoon plus 2 teaspoons ground turmeric
1 tablespoon plus 1 teaspoon ground cumin
2 teaspoons pepper
1 teaspoon ground cardamom
1 teaspoon ground fenugreek

Preparation

Combine all ingredients in a small bowl; stir well. Store mixture in an airtight container; shake well before each use. Use to season chicken, beef, pork, lamb, fish, or shrimp, or stir into lentils or rice.
