Curry Powder
Compared to a commercial curry powder, this one is dark, slightly bitter, and salt-free. All the ingredients in this version are available at most supermarkets, except the fenugreek seeds, which you can find in Indian and Middle Eastern markets.

Ingredients
- 1 1/2 tablespoons coriander seeds
- 1 teaspoon cumin seeds
- 1 teaspoon yellow mustard seeds
- 1 teaspoon fenugreek seeds
- 1 teaspoon white peppercorns
- 6 whole cloves
- 1 tablespoon ground turmeric
- 1 teaspoon ground red pepper
Preparation
- Combine the first 6 ingredients in a spice or coffee grinder, and process until finely ground. Place the spice mixture in a small bowl; stir in the turmeric and red pepper. Store in an airtight container.
