Curried Rice

  • Yield: Makes about 3 1/2 cups

Ingredients

  • 1 cup uncooked long-grain white rice
  • 1 small onion, chopped
  • 1 apple, peeled and chopped
  • 1 tablespoon curry powder
  • 1 teaspoon minced garlic
  • 2 teaspoons olive oil
  • Vegetable cooking spray
  • 2 cups fat-free reduced-sodium chicken broth
  • 1/4 teaspoon salt
  • 1/4 cup golden raisins
  • 1/4 cup sliced green onions
  • 2 tablespoons slivered almonds, toasted

Preparation

Sauté uncooked rice and next 4 ingredients in hot oil in a large saucepan coated with cooking spray 5 minutes. (Do not brown.) Stir in broth and salt; bring to a boil. Cover, reduce heat, and simmer 20 minutes or until liquid is absorbed. Stir in raisins, green onions, and toasted almonds.
