4 (4-ounce) mahimahi fillets (about 3/4 inch thick)
2 teaspoons vegetable oil
1/3 cup hot mango chutney
2 tablespoons raisins
2 tablespoons flaked sweetened coconut
1 tablespoon hot water
1/4 cup sliced green onions (about 1)
How to Make It
Combine first 4 ingredients in a shallow bowl; dredge one side of each fillet in flour mixture. Heat oil in a nonstick skillet over medium-high heat until hot. Add fish, floured side down, and cook 3 minutes on each side or until fish flakes easily when tested with a fork.
Combine chutney and next 3 ingredients. Serve fish immediately with chutney mixture. Sprinkle each serving with green onions.
