Ingredients

2 teaspoons curry powder
1/2 teaspoon salt
1/4 teaspoon crushed red pepper
4 (6-ounce) lamb rib chops, trimmed
1/2 cup mango chutney
2 tablespoons chopped fresh mint

Preparation

Heat a grill pan over medium-high heat.

Combine curry powder, salt, and pepper; rub evenly over lamb. Add lamb to pan; cook 5 minutes on each side or until desired degree of doneness. Combine chutney and mint; serve with lamb.
