Curried Chicken Salad Sandwiches

Ingredients

  • 2 1/4 cups chopped cooked chicken breast
  • 2 cups seedless green grapes, halved
  • 3/4 cup thinly sliced green onions
  • 1/4 cup chopped walnuts
  • 1/4 cup low-fat mayonnaise (such as Hellman's)
  • 1/4 cup fat-free yogurt
  • 1 teaspoon curry powder
  • 5 lettuce leaves
  • 10 (1-ounce) slices whole wheat bread, toasted

Preparation

Combine first 7 ingredients in a large bowl, tossing well. Cover and chill until ready to serve.

Place a lettuce leaf on each of 5 slices bread. Top with 1 cup chicken mixture and remaining slice of bread. Serve immediately.
