Swap your usual chicken salad recipe for this spicy-sweet version flavored with fresh fruit, curry powder, and a hint of honey. Serve on a baguette or with whole-grain crackers for a refreshing–and fast–meal.
1 1/2 cups chopped cooked chicken breast (about 8 ounces)
1/2 cup halved seedless red grapes
1/2 cup diced peeled apple
2 tablespoons diced pineapple
1 tablespoon dried currants
3 tablespoons low-fat mayonnaise
1 teaspoon honey
1/2 teaspoon curry powder
1/2 teaspoon fresh lemon juice
1/8 teaspoon salt
1/8 teaspoon freshly ground black pepper
1 tablespoon sliced almonds, toasted
How to Make It
Combine first 5 ingredients in a large bowl. Combine mayonnaise and next 5 ingredients (through pepper), stirring with a whisk. Pour mayonnaise mixture over chicken mixture; toss gently to coat. Sprinkle with almonds. Cover and chill.

I made this with leftovers from a rotissere chicken and it was great. I used nonfat greek yogurt in place of the mayonnaise and it worked out well. I added dried cranberries, instead of pineapple and currents. (None on hand) I plan on making this recipe on a regular basis.It was crunchy, filling and delicious.
I just made this for a housewarming party and got rave reviews. I usually leave out the pineapple so it isn't quite so sweet, and subsitute raisins for currents. It usually take a little more lemon juice to get the tangy-ness right, but is easy to make and very tasty. Serve with crackers or little rye bread squares.
This recipe is wonderful. I added more curry as others had suggested & a little more black pepper & almonds because our family likes both. Just mixed the almonds on in. I tripled the recipe because I wanted leftovers for the next day. So glad I did because it is even better the next day. Will DEFINITELY do this one again!
Great on lettuce leaf boats. I substituted apples for pears (no apples available) and added about 6 chopped arugula from my garden. This was very tasty. Even my husband who doesn't care for vegetables ate this all up.
This was delicious. Nice change from plain chicken salad. I did marinate my chicken breast in the seasonings listed in the recipe then did a "steam-fry" with the chicken and mainade. I added a little more of the seasonings just before tossing all ingredients. I didn't add the currents or almonds, b/c I didn't think the family would like it.
This was okay - might be good with considerable modifications. The description stated it was "spicy-sweet". There is nothing spicy about this and I doubled the curry powder as other reviewers suggested it needed to be increased. In my opinion it's bland and overly sweet and I didn't even include the pineapple knowing that would make it even sweeter. Maybe more lemon juice, curry powder and possibly some onion and less fruit would make it taste more like something described as "curried". It tasted more like a sweet fruit salad than curried chicken.
This is a great recipe! I am only giving it 4 stars because it needs a few tweaks. For starters I added way more curry powder then the recipe called for. If you are a fan of Indian food...1/2 a teaspoon is not enough. Next time I think I will use golden raisins instead of currants as well. Overall, it was fabulous!
This was really yummy. I substituted half non-fat plain greek yogurt for mayo and it was just as tasty. I used canned chicken because I didn't have time to make the chicken breasts. I also put the salad in a whole wheat pita with lettuce and it was amazing. Even my boyfriend (hungry from working out) was satisfied! Great week night dinner (and leftovers for lunch, yay!)
