The balance of spices in this recipe was outstanding - not so much curry that it overpowered the other ingredients as so many curry recipes do. I will definitely make this again.
Curried Chicken Salad

- 6 cups chopped roasted or cooked chicken
- 2 celery ribs, diced
- 4 green onions, minced
- 1 cup mayonnaise
- 2 tablespoons dry white wine (optional)
- 3/4 teaspoon salt
- 2 teaspoons curry powder
- 1/2 teaspoon pepper
- 8 cups gourmet greens
- Fresh fruit
- 1. Stir together first 8 ingredients. Chill. Spoon about 1 cup chicken salad onto a bed of gourmet greens. Serve with fresh fruit.
