Currant-Glazed Lamb Chops with Pistachio Couscous

    Super-easy but definitely company-worthy. Prepped to recipe except used fresh garlic instead of powdered for the lamb and only made half the sauce, and that was plenty per serving for us. Served with steamed asparagus. Lovely meal.

    This was outstanding. Quick (although it was closer to 30 minutes) and easy to prepare, the results were outstanding. There were no leftovers even though I doubled the recipe. I will not double the sauce next time, however, as it made so much. The couscous was a delightful accompaniment. I also served steamed green beans and a mixed greens salad with apples and pecans. It was a hit, company-worthy but easy on the cook. Loved it!

    Very easy to prepare and totally delicious. Prepared exactly to recipe, no changes. A perfect meal for company. Instead of pouring the sauce over the chops, I added them to the pan with the glaze and turned them for a good coating. Put chops on a serving dish and the sauce in a small gravy boat next to them. Garnished with a few sprigs of rosemary. Lovely! The amount of sauce was perfect for us. Allowed those who wanted more to pour! Sauce excellent over couscous, too. A keeper recipe. Perfect for entertaining, as it is impressive and easy.

    Worthy of a Special Occasion

    Excellent! Easy enough for a quick weekday dinner, but elegant and tasty enough for a very special occasion. The amount of sauce for us was perfect, as my husband loved it so much he poured it over his couscous. Served it with steamed asparagus and a romaine salad with apples, cuties, and pistachios sprinkled lightly on top. Wowed my family, even my gourmet food loving son. This recipe is a keeper for sure.
