Cumin Chicken with Spicy Tomato Relish

The tomato relish is similar to a salsa. It's great on fish as well as chicken.

Ingredients

  • 3/4 cup chopped tomato
  • 1/2 cup chopped peeled cucumber
  • 1/2 cup chopped green bell pepper
  • 3 tablespoons chopped red onion
  • 1 tablespoon fresh lime juice
  • 1 teaspoon chopped fresh cilantro
  • 2 teaspoons olive oil
  • 1/4 teaspoon salt
  • 1 small jalapeño pepper, seeded and chopped
  • 1 garlic clove, minced
  • 1 tablespoon ground cumin
  • 1 teaspoon black pepper
  • 1/4 teaspoon salt
  • 4 (6-ounce) skinless, boneless chicken breast halves

Preparation

  1. 1. Combine first 10 ingredients in a small bowl; set aside.
  2. 2. Combine cumin, black pepper, and 1/4 teaspoon salt; rub chicken breast halves with cumin mixture.
  3. 3. Place a large cast iron skillet over medium-high heat until hot (about 2 minutes). Add chicken, and cook 7 minutes on each side or until done. Cut each chicken breast half diagonally across grain into thin slices, and arrange on individual serving plates. Serve with tomato relish.
