Cumin Chicken with Spicy Tomato Relish
The tomato relish is similar to a salsa. It's great on fish as well as chicken.

Ingredients
- 3/4 cup chopped tomato
- 1/2 cup chopped peeled cucumber
- 1/2 cup chopped green bell pepper
- 3 tablespoons chopped red onion
- 1 tablespoon fresh lime juice
- 1 teaspoon chopped fresh cilantro
- 2 teaspoons olive oil
- 1/4 teaspoon salt
- 1 small jalapeño pepper, seeded and chopped
- 1 garlic clove, minced
- 1 tablespoon ground cumin
- 1 teaspoon black pepper
- 1/4 teaspoon salt
- 4 (6-ounce) skinless, boneless chicken breast halves
Preparation
- 1. Combine first 10 ingredients in a small bowl; set aside.
- 2. Combine cumin, black pepper, and 1/4 teaspoon salt; rub chicken breast halves with cumin mixture.
- 3. Place a large cast iron skillet over medium-high heat until hot (about 2 minutes). Add chicken, and cook 7 minutes on each side or until done. Cut each chicken breast half diagonally across grain into thin slices, and arrange on individual serving plates. Serve with tomato relish.
