Cucumbers In Sour Cream

  • 4 medium cucumbers
  • 1 1/2 teaspoons salt
  • 6 radishes, minced
  • 1 (8-ounce) carton commercial sour cream
  • 1 tablespoon plus 1 teaspoon minced onion
  • 1 teaspoon lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • Sliced radishes (optional)


  1. Slice cucumbers into a medium bowl; sprinkle with 1 1/2 teaspoons salt, and chill 1 hour. Drain on paper towels, pressing to remove liquid. .Return to bowl; stir in remaining ingredients, tossing gently. Chill. Garnish with sliced radishes, if desired.
