Ingredients

  • 3 pounds cooked and quartered baby red potatoes
  • 1 cup Greek yogurt
  • 1 cup peeled, seeded, and finely chopped cucumber
  • 2 garlic cloves, pressed
  • 2 tablespoons chopped fresh dill
  • 2 teaspoons lemon juice
  • Salt and freshly ground pepper to taste

Preparation

Stir together potatoes, yogurt, cucumber, garlic, dill, and lemon juice. Season with salt and freshly ground pepper to taste. Serve immediately.
