Cucumber-Yogurt Potato Salad
Ingredients
- 3 pounds cooked and quartered baby red potatoes
- 1 cup Greek yogurt
- 1 cup peeled, seeded, and finely chopped cucumber
- 2 garlic cloves, pressed
- 2 tablespoons chopped fresh dill
- 2 teaspoons lemon juice
- Salt and freshly ground pepper to taste
Preparation
- Stir together potatoes, yogurt, cucumber, garlic, dill, and lemon juice. Season with salt and freshly ground pepper to taste. Serve immediately.
