Cucumber-Watercress Salad

If you can't find wasabi paste, mix equal parts wasabi powder and water.

  • Yield: Makes about 3 1/2 cups

Ingredients

  • 2 tablespoons seasoned rice vinegar
  • 1 tablespoon dark sesame oil
  • 1 tablespoon sake
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • 1 teaspoon wasabi paste
  • 1 teaspoon minced garlic
  • 1 English cucumber, sliced
  • 3 large radishes, cut into matchsticks
  • 2 cups torn red leaf lettuce
  • 1 cup torn watercress

Preparation

Whisk together first 8 ingredients in a large bowl; add cucumber and radishes, tossing well. Cover and chill at least 1 hour. Just before serving, toss lettuce and watercress with cucumber mixture.
