Cucumber-Watercress Salad
If you can't find wasabi paste, mix equal parts wasabi powder and water.
Yield: Makes about 3 1/2 cups
Ingredients
- 2 tablespoons seasoned rice vinegar
- 1 tablespoon dark sesame oil
- 1 tablespoon sake
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground pepper
- 1 teaspoon wasabi paste
- 1 teaspoon minced garlic
- 1 English cucumber, sliced
- 3 large radishes, cut into matchsticks
- 2 cups torn red leaf lettuce
- 1 cup torn watercress
Preparation
- Whisk together first 8 ingredients in a large bowl; add cucumber and radishes, tossing well. Cover and chill at least 1 hour. Just before serving, toss lettuce and watercress with cucumber mixture.
