Cucumber Salsa
This recipe goes with Grilled Salmon Quesadillas with Cucumber Salsa
Yield: 1 1/4 cups
Ingredients
- 3 small cucumbers, chopped
- 1 garlic clove, minced
- 1 jalapeño pepper, seeded and diced
- 1/2 small red onion, chopped
- 1/2 small yellow bell pepper, seeded and chopped
- 2 tablespoons minced fresh cilantro
- 2 teaspoons red wine vinegar
- 1 teaspoon olive oil
- 1/2 teaspoon sugar
- 1/4 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
Preparation
- Combine all ingredients; cover and chill.
