This simple veggie side salad incorporates the rich nutty flavor of tahini with toasted sesame oil, fish sauce, and fresh herbs for a flavor-packed dish. Serve it at a summer picnic or cookout, toss it into a bowl of greens for a heartier bite, or top it with a cooling dollop of Greek yogurt for added tang. Make a double (or triple) batch of the spicy tahini dressing and use it to amp up other dishes throughout the week.
For the Dressing:
1/4 cup tahini
2 tablespoons water
1 tablespoon sambal oelek chili paste
1 tablespoon toasted sesame oil
1 tablespoon fish sauce
1 tablespoon fresh lime juice
1 teaspoon peeled fresh ginger, minced
1/2 teaspoon kosher salt
For the salad:
2 English cucumbers, sliced and quartered
1/4 cup chopped fresh cilantro
1/4 cup chopped fresh mint
1/4 cup chopped almonds
How to Make It
For the dressing: In a medium bowl, combine all ingredients and whisk until combined.
For the salad: Combine all ingredients in a large bowl and toss. Add dressing and serve immediately.
