Ingredients
- 1 cup diced peeled English cucumber
- 1/2 cup diced red onion
- 1/2 cup diced Roma tomatoes
- 1 tablespoon minced fresh jalapeño chili
- 1/4 cup red wine vinegar
- 1 tablespoon chopped fresh mint leaves
- Salt and pepper
Preparation
- In a bowl, mix cucumber, onion, tomatoes, chili, vinegar, and mint. Add salt and pepper to taste.
