Ingredients

  • 3 cups finely diced seeded peeled cucumber (about 2 large)
  • 1/4 cup light mayonnaise
  • 2 tablespoons finely chopped fresh mint
  • 2 tablespoons finely chopped fresh flat-leaf parsley
  • 1 teaspoon grated lemon rind
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon salt
