Cucumber Dressing

  • Yield: 1 1/2 cups (serving size: About 3 tablespoons)

Ingredients

  • 3/4 cup chopped peeled cucumber, divided (about 1)
  • 1/2 cup fat-free sour cream
  • 1/4 cup low-fat mayonnaise
  • 1 1/2 tablespoons chopped fresh dill
  • 1 teaspoon grated fresh onion
  • 1 teaspoon lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Preparation

Place 1/2 cup cucumber, sour cream, and mayonnaise in a blender or food processor; process until smooth. Pour cucumber mixture into a bowl; stir in remaining 1/4 cup cucumber, dill, and remaining ingredients. Cover and chill, if desired.
