Ingredients

  • 1 cup water
  • 2/3 cup sugar
  • 2 tablespoons light-colored corn syrup
  • 3 cups chopped peeled English cucumber
  • 1/3 cup fresh lime juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground red pepper
  • 9 (1/3-cup) ice pop molds
  • 9 craft sticks

Preparation

  1. 1. Boil water and sugar in a saucepan over medium-high heat until sugar dissolves. Cool and stir in corn syrup.
  2. 2. Combine cucumber, lime juice, salt, and ground red pepper in a blender or food processor; process until smooth. Combine cucumber mixture and sugar syrup; pour into ice pop molds. Cover and insert craft sticks; freeze 4 hours or until thoroughly frozen.
