1 cup water
2/3 cup sugar
2 tablespoons light-colored corn syrup
3 cups chopped peeled English cucumber
1/3 cup fresh lime juice
1/4 teaspoon salt
1/4 teaspoon ground red pepper
9 (1/3-cup) ice pop molds
9 craft sticks


1. Boil water and sugar in a saucepan over medium-high heat until sugar dissolves. Cool and stir in corn syrup.

2. Combine cucumber, lime juice, salt, and ground red pepper in a blender or food processor; process until smooth. Combine cucumber mixture and sugar syrup; pour into ice pop molds. Cover and insert craft sticks; freeze 4 hours or until thoroughly frozen.
