Ingredients
- 1 pound(s) skinless boneless salmon filet
- 1 tablespoon(s) olive oil
- 1/4 cup(s) dijon mustard
- 2 tablespoon(s) lemon juice
- 1/4 cup(s) low fat mayonaise
- 1/4 cup(s) fresh chives chopped
- 1/4 cup(s) bread crumbs
- 2 teaspoon(s) lemon zest
Preparation
- soak planks (cedar, oak, etc) in water for 2 hours minimum
- heat grill to 400 degrees with hot fire on one side and no fire on the other
- mix dijon mustard, mayonaise, chives, lemon juice and let stand for 20 minutes
- Pat slamon filet dry and lightly coat filet in olive oil
- Place filet on soaked planks
- Slather mustard/ mayo mixture on fish covering sides to seal in flavor
- Sprinkle breadcrumbs and lemon zest on top
- Place planked salmon over direct heat for 5 minutes
- Move plank to indirect heat until fish is opaque and begins to flake. Usually another 5-10 minutes
- Have spray bottle with water available to douse planks in case they catch fire
