Crunchy Pea Salad with Miso Dressing
Miso is a fermented soybean paste that's added for flavor. This Japanese culinary staple is available in a variety of flavors and colors and has a consistency similar to peanut butter. Yellow miso is a good choice if you only want to keep one type of miso on hand.

Ingredients
- 1/4 cup water
- 2 tablespoons seasoned rice vinegar
- 2 tablespoons light yellow miso
- 2 tablespoons bottled minced ginger
- 1 1/2 tablespoons mirin (sweet rice wine) or white grape juice
- 1 tablespoon dark sesame oil
- 1 1/2 teaspoons fresh lemon juice
- 1 garlic clove, minced
- 1 (16-ounce) package frozen petite green peas, thawed
- 2 cups matchstick-cut carrots
- 1 cup diced seeded cucumber (about 1 small)
- 1/2 cup sliced green onions (about 4)
- 1/4 cup sliced almonds, toasted
Preparation
- 1. Combine first 8 ingredients in a small bowl, stirring with a whisk until blended.
- 2. Combine peas and next 4 ingredients in a medium bowl. Add dressing, and toss gently.
