Crispy Roasted Pork Belly

Ingredients

  • 1 (1 3/4-lb.) pork belly
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 large onion, cut into wedges
  • 2 celery ribs, coarsely chopped
  • 2 carrots, coarsely chopped
  • 4 garlic cloves, crushed
  • 6 fresh thyme sprigs
  • 2 bay leaves
  • 1/2 cup chicken broth

Preparation

  1. 1. Preheat oven to 325º. Make 1/4-inch-deep cuts in fattiest side of pork. Sprinkle pork with salt and pepper. Place in a large roasting pan. Place onion and next 5 ingredients around pork. Pour broth in pan, and cover tightly with aluminum foil.
  2. 2. Bake at 325º for 3 to 3 1/2 hours or until fork-tender. Remove pork from pan, and let stand 15 minutes. Discard vegetables and liquid in pan.
  3. 3. Cook pork in a large cast-iron skillet over medium-low heat 8 to 10 minutes on each side or until browned and crisp.
