  • 1 16-oz. bag frozen shelled edamame, thawed, patted dry
  • 2 teaspoons canola oil
  • 1 tablespoon cumin seeds
  • 1 tablespoon plus 1 1/2 tsp. curry powder
  • 1 teaspoon salt


  1. Preheat oven to 375ºF. In a large mixing bowl, toss all ingredients until well combined. Spread in a single layer on a large, rimmed baking sheet. Bake until golden brown, about 40 minutes, stirring every 10 minutes. Remove from heat and allow to cool on baking sheet on a wire rack.
