    I only used about 2 cups of olive oil for 2 legs and 2 small breasts, and it was absolutely excellent! Probably not as good as duck fat confit, but it's healthier and delicious enough!

    I left out the olives and used duck fat, but this was delicious! jeannes, to confit something, you have to submerge it in a fat of some kind, hence the 6 cups of olive oil.
