I have learned from my past...always use fresh Cod...it doesn't do well flash frozen, or at least not for me. Using fresh Cod, this was absolutely delicious and crunchy, yet lite.

Easy and delicious and will make it again. I substituted mustard, with spicy brown mustard and used the Panko crumbs. Yumo

I don't make cod very often, and not sure how fresh my choice of fish was. This recipe was pretty good, but I'll go back to other fish types in the future. I'm a big mustard fan, but would recommend a greater mayo : mustard ratio for this recipe. Happy cooking!

Tasty, I think I would try the panko bread crumbs next time though. I liked the taste of the mustard with the fish. I would make this again, but not cook it for the full 15 minutes, maybe 10 minutes.

Very good way to dress up fish in a pinch. Made it with haddock instead of cod. Will definitely try with panko crumbs next time.
