Crisp Chicken Confit

    Recipe failed to inform cook to rinse salt/pepper mixture after marinating resulting in chicken that was too salty. Duck confit recipes instruct to rinse off or wipe off of salt prior to slow cooking. I have a leg thigh left in the freezer and may try again, wiping off salt. We separated the liquid remaining after cooking from the meat and duck fat, and used the liquid to make mashed potatoes. Tasty.
