Put all ingredients in a blender. Blend on high speed for 2 to 3 minutes. Place the batter in the refrigerator for 1 hour before using.
Heat skillet to medium heat. Place a pad of butter or margarine in skillet. Pour enough batter to cover the bottom of skillet. Cook on both sides until golden brown.
Place on plate and fill with your favorite toppings. Roll up and add syrup - top with cinnamon.
