Ingredients

  • 1 Onion
  • 2 tablespoon(s) Butter
  • 2 tablespoon(s) Flour
  • 1-2 cup(s) Chopped tomatoes or diced tomatoes
  • 1 cup(s) cheese
  • 1 cup(s) bread crumbs

Preparation

Boil eggplant (add salt to water to taste) until tender. Saute' butter, flour, and onion to make a roux. Mix together eggplant, tomatoes, and roux. Place in casserole dish and bake at 350.
