- 1 Onion
- 2 tablespoon(s) Butter
- 2 tablespoon(s) Flour
- 1-2 cup(s) Chopped tomatoes or diced tomatoes
- 1 cup(s) cheese
- 1 cup(s) bread crumbs
- Boil eggplant (add salt to water to taste) until tender. Saute' butter, flour, and onion to make a roux. Mix together eggplant, tomatoes, and roux. Place in casserole dish and bake at 350.
