Set a heatproof bowl over a pot of simmering water. Add sugar and milk to bowl, and cook over simmering water, stirring often, until sugar dissolves, about 3 minutes.
Remove from heat, and whisk in crème fraîche, vanilla, and salt. Cover and chill 30 minutes.
Pour mixture into freezer bowl of a 1 1/2-quart electric ice-cream maker, and freeze according to manufacturer's instructions. Transfer to an airtight freezer-safe container; freeze until firm, about 2 hours.
